I Ordered a Pizza in the Evening—and Noticed Something Strange

17. The Next Time You See Bubbles, Look a Little Closer

There is something surprisingly satisfying about understanding an everyday mystery.

A pizza arrives at your table.

You lift the lid and notice several rounded bubbles on the cheese.

At first, their appearance might seem unusual.

But once you understand what creates them, those little bumps tell a completely different story.

They reveal that water has been heated, steam and air have expanded, proteins have softened, and the cheese has responded to the intense environment of the oven.

Some bubbles rise and collapse.

Others stretch and develop golden-brown surfaces.

A few become crisp around the edges.

All of this can happen naturally during cooking.

And none of it requires unusual ingredients or mysterious processes.

It is simply the science of food unfolding right in front of you.

That does not mean you should ignore genuine food-safety issues.

A pizza made from spoiled ingredients or stored improperly can still be unsafe, regardless of how attractive it looks.
